HapiJS and mongoDB project scaffold - node.js

Coming from SQL and other "regular dev" methodologies (Ruby, Java, ,.NET) I've been looking for a while now on a good HapiJS project scaffold using mongoDB.
I can't find a one that really hit the spot.
What is the correct project structure? What is the best way to treat models? and more...
I know there are couple of resources out there, but I can't seem to find a one that really explain and justifies these design decisions.

Depends what you want there is hapi-mongo-models and dogwater. I am currently writing models for mongo with wadofgum as its extensible and have started writing wadofgum-mongodb but just early proof of concept at the moment. With wadofgum you can combine your own validation, methods and database for modelling data objects which I find useful.

There are some starters/scaffolds available for hapi.
You could look at these two for example - they both use MongoDB and provide a good starting point:

Node Project & Practice

I am learning Node JS. It had almost learnt 70%. I am very interested in Backend Development but I'm not interested in Frontend development. My question is how do I practice my Node Skills. I only know HTML, CSS in Frontend. How can I make projects in Node JS without knowing Frontend? Or do I need to learn frontend frameworks such as React too to make projects.
You can build an API and use postman to make requests. Start with something simple and keep improving by refactoring your code.
You can work on the API creation part but in my opinion, you must learn one frontend framework it will not only increase your skill sets but also help you to coordinate with frontend easily and take more advantage of it than the projects you will build will be more useful and advanced as well.
You could also focus on implementing some algorithms and data structures starting of with simple ones such as LinkedLists, ArrayLists, sorting algorithms and then move on to (binary) trees and graphs.
These will be required for any programming language to solve (complex) problems and there are many books and internet resources for this. Just search for algorithms and data structures and you'll get plenty. You don't need more than a console application with some simple console.log() statements to implement algorithms - no need for fancy UI.
Last but not least, you should certainly have a look at TypeScript if you want to develop more complex backend applications.
If you really want to do Web Development though it is certainly helpful to have a basic understanding of frontend development or know the basics of common frameworks such as React, Vue, Angular or Svelte.
As others have mentioned for API development you could also just use Postman to send requests.

ReactJS and a backend

I am new to React. I created a simple login form and sign up form.
I am a little confused about using a backend. I've Googled it (lol) and I've seen a large variety of answers from using AWS to creating another project with NodeJS/Express.
For a beginner, what is the best approach? What confuses me is that I am handling all the routing in my React app. The tutorials that I've seen appear to handle routing in the NodeJS/Express portion.
Like Chris mentioned your question is to broad to answer, but I'll try to propose some general directions which may help you to pursue building a back-end.
There is not really a best approach. I suggest you look into several courses and tutorials on what web technologies suits best for the type of application you want to build. Start first by selecting which framework would provide the most productive and scale-able workflow for you. This is depended on various factors of your envisioned application and your current skill-set. Then follow along tutorials and read documentation of each separate technology first to get a good understanding of each building block. When grasping how everything functions individually, looked in complete full stack tutorials to see how everything works together and how you connect your front-end to your back-end.
I chose for a Nodejs RESTfull API myself using the MERN stack (MongoDB, Express, Reactjs and Nodejs), but you can also look into python (django, flask) or PHP back-ends as well.

They provide many up to date tutorials for different web-technologies so you can make an informed decision yourself of what you want to adapt to.
Keep in mind there is a lot to work with when you just getting started, but at some point things will become familiar after using it over and over again and it becomes less overwhelming.

derbyjs for REST API

First of all, I have seen this question: How to best create a RESTful API in Node.js and it has pointed me towards mers, which has been a great help.
But I have also been reading a lot of good things about derbyjs and it does look really interesting.
So my questions, does it make sense to use derbyjs for ceating a REST API (real-time features might be useful in the future, but not a 100% certain at this pont.)? And is it any better or worse than mers?
I am really grateful for any help.

The strength of Derby is that the same views (i.e. rendering templates into HTML) can be executed on the client as well as on the server. So for building a webapp, you won't have to explicitly code a REST API and then use it from the client-side JavaScript, instead you just write your views and Derby does the rest.
So if you're looking into making a REST API only (as your question states) and no HTML, there is no advantage in using Derby. It's the wrong tool for the job.
It depends on what you're looking for exactly. Derby.js is built on top of Express.js which has excellent support for creating a REST API. This also means that anything you can do in Express, you could also do in Derby. If you want real-time features, and the ability to build out a REST API, Derby.js is an excellent choice. It's also one of the reasons that people recommend Derby over something like Meteor (currently Meteor does not have support for REST endpoints, but it will hopefully in the future so also something you might want to keep your eye on, if you're in the market for real-time framework). However, if you're not looking for a node framework with an emphasis on real-time functionality, Derby is not the right choice. I would however recommend looking into Express.js to build a REST API. We use it currently for that purpose and it works really well. There are also a number of libraries and packages that play nicely with Express, so in the future if your needs change, it's easy to find something that works well with Express.
Anyway, I would recommend checking out some basic tutorials for how to create a REST API in Express because once you're able to successfully do that, adding some of the real-time features of Derby.js is fairly straightforward.

searching and retrieving data using node.js?

I was wondering is node.js good fit for searching massive amount of data, i know its main use is for asynchronous sceanrious like chat, ftp and real time etc. I was thinking of using node.js with mongodb to search 300,000 records of books for the library at my university, and see if it would oppose to using php & mysql. any advice would be great thanks.
Node.js would be a fine application interface for searching data .. but practically, so would PHP or many other languages :).
Your backend data storage solution (MySQL, MongoDB, ..) is a harder choice and really depends on the how you want to index and search the data.
If your main goal is search you probably want to look into a search application based on something like Apache Lucene. These typically use a relational database backend, although some newer efforts like ElasticSearch do have growing community support for ingesting data from sources like MongoDB (ref: MongoDB River Plugin for ElasticSearch).
Since you mentioned book search and libraries, you might also want to look into ILS (Integrated Library Search) applications which may already solve that problem. There are several open source products such as Koha and Evergreen.

CouchDB - share functions across views, across design documents, across databases

Ok, here's the thing.
I have a good JS background, had my share of JS in the past, and have lots of cool bare-bones tools I take with me from project to project that act like a library.
I'm trying to formulate work with CouchDB.
Now, after getting used to luxury of cool tools that you wrote and simplify the language for you - I find it a little frustrating to write many things in bare-bones manner.
I'm looking for a way I can load to the database context a limited, highly efficient and generic set of tools that focus on the pure language and makes the work with the language much more groovy (and gosh, no, im not talking about jquery or any of the even more busty libraries out there).
If on top of that, there could be found a way where I can add to the execution context of the couchDB JS engine some of my own logic tools (BL model functions) - it would present a great and admirable power and make couchDB the new home for a JavaScript-er like me.
Maybe I'm aiming too low.
I'd be satisfied with a way I can allocate a set of extensions even for a specific database, and I don't mind do it for every database in separate. Or worse - to add it to every design document, so I can teach for example several views in the same design-doc what a Person is, what a Worker is, and use their methods to retrieve data from them according to logic in a reusably coded manner.
Can anybody point me the the way?
Whatever way you can point me - I'll be very verrry grateful.
If there are ways for all of these - then great.
Trust me to know the difference of what logic belongs to what layer...
