The Orchard.Media module allows you to upload and manage images, documents, etc.
Does it support a Widget to list Documents so that a user can download any?
If not, does the Orchard.Media module provide API to write such a widget in a separate module?

Create a projection query, filter on the Document content type. You can then use that query in a projection widget.

I'm new to Orchard but from various blog posts and SO answers it seems that Lists would help me achieve what I want. Unfortunately it seems that Lists have now been deprecated.
The documentation at http://docs.orchardproject.net/Documentation/Creating-lists suggests using Taxonomies instead. Is it possible to achieve the functionality of a List using Taxonomies?
You can use taxonomies to produce a list of content items. Create your taxonomy, add some items to it, attach the taxonomy field to your content type, and select the taxonomy you want to be displayed in the content type settings. Create a content item with a taxonomy selected then go to the url:
/taxonomy-name/*selected-taxonomy-item*
and it should display a list of all items with that taxonomy selected.
However, lists were deprecated and replaced by Projections, I would recommend using these. They are part of core and can be enabled from the backend. You can then create a query with your projection uses. This query determines what items you want displaying. It is pretty nice and simple, just need to play around with it. Let me know if you need more details about it, or probably just googling Orchard Projections will produce some useful links if you need to do some more complex things with it
Is it possible to add a custom control to the Document Type? Suppose i couldn't create a multiselect or just a simple textfield control. How could i create a custom one and use that from the Document Type page in Umbraco?
If this is possible, then what steps need to be taken? Because i can add all sorts of config information in the Document Type controls that currently exist in there. Like, when i add a textfield i can gvie it a name, an alias and a validation message (and it has some others options).
Do i have to build the custom Document Type control in a specific way? And how is it saved to the database? How does Umbraco handle that?
Any information on this matter is more than welcome!
Since adding custom document types is native to Umbraco, and judging by the description in your question, I'm going to assume that you are talking about adding custom data types with user controls.

I want a metadata field getting values from database record. This metadata field should be added to document.

I presume you are using Liferay 6.1.
Web Content Structures
As for Web Content, you could programmatically create a JournalStructure (see JournalStuctureLocalServiceUtil) and populate the list of possible values for your structure field with values coming out of the database. You can put this "import code" inside a batch job, so your structure field and the values inside the external database are always in sync.
Document Metadata
How to do this with Metadata Sets is probably more interesting, as not only Dynamic Data Lists and Documents & Media use this in Liferay 6.1; as of 6.2, Web Content structures will utilize the same metadata API in favor of the old Journal API.
For this to implement, check out the xsd column of the DDMStructure table. It has more or less the same format as the XML for a JournalStructure, however there are more options available. Use DDMStructureLocalServiceUtil#addStructure to add such a new structure. Again, run this inside a batch so you always have the latest external DB values.
I have defined my own projection by a query which returns a set of content items of known content type. I would like to take pick up certain content parts of these content items and display them in the list. Using shape tracing tool I have found the view template where to write my custom layout:
/Views/Parts.ProjectionPart.cshtml
but from the Model variable in the template I can not get the data I want because it is way too high above from the content parts data.

name of the owner who created the product

Have you tried adding a layout in the projector module? There is a properties mode option that lets you select which fields/data to show. If the data you want is not there, you should be able to implement an IPropertyProvider. There are examples of this in the Projections module code.
Custom field allows you to basically print any content in a field in a view. However, it is not sortable by default. Other than writing a view from scratch, what is the easiest way to allow for sorting using drupal views on a custom php field?
