Under https://github.com/hyperledger there are many Java Client SDK projects like fabric-gateway / fabric-gateway-java / fabric-sdk-java.
Why are there so many Java clients?
How do I choose which one to use?

I appreciate it could be more obvious. The README for each repo does give some guidance. From the fabric-sdk-java README:
This project provides a low-level API for interacting with Hyperledger Fabric blockchain networks, and is used by the high-level Hyperledger Fabric Gateway SDK for Java [...] For building Hyperledger Fabric blockchain client applications, you are strongly encouraged to use the high level API.
That points to fabric-gateway-java as the API to use.
From Fabric v2.4, the fabric-gateway client API is the preferred client API for developing applications. It provides a consistent client API in Go, Node and Java, with much of the heavy-lifting moved to a server-side Fabric Gateway service, implemented in the peer.

I am developing a number of microservices. They will communicate through azure service bus. I would like the messages to be sent and received as strongly typed objects.
Am I violating the microservice principles by creating a bunch of classes to represent the messages?
I would probably put these classes in a nuget package, that I use in each of the microservices. Any examples or best practice you can point me to on this?
I wouldn't call this 'violation' but rather a design choice. For example, when using wear abstraction such as NServiceBus or MassTransit, you're by design using strongly typed messages. Those are contracts and are expected to be shared between services.

Many courses are teaching composer first
And then fabric that too older versions of it. So should i learn that course ?
Or should i look for something which teaches fabric 2.x and is composer used in industry ?
I would not recommend investing any time learning Hyperledger Composer. It is more than deprecated, it is end of life and it would not be sensible to be using it in any sort of production environment now. You should focus your efforts on learning Hyperledger Fabric 2.x

Doing the Azure course on Pluralsight will give you knowledge of the Azure Cloud Computing platform from Microsoft. Azure is typically used for storing databases in the cloud or for deploying applications to a cloud environment or similar tasks.
While many companies look for developers who have experience with cloud platforms like Azure and AWS most often the person who performs Deployments, a task that brings an application from the Development stage to the stage where it is publicly available and usable, specifically specializes in that skill and those tools.
The position where a person is responsible for the deployment, integration, and maintenance of the application is typically called "Dev Ops".

We are looking for a cloud based solution for messaging queue. We have chosen RabbitMQ and we already have few app that are using this. RabbitMQ is hosted locally. For testing purposes it was ok, but right now when business is growing and we are looking into centralised RabbitMQ with HA we are looking into cloud solution.
My question is: which service would you recommend for RabbitMQ,
the options that we've found are:
cloudamqp.com/
https://addons.heroku.com/rabbitmq-bigwig
https://bitnami.com and use Azure
or
host it in Azure and manage by ourself - but we would like to avoid this as much as possible - not enough human resources to look after that.
What would you recommend?
my suggestion is http://cloudamqp.com - i use them for just about of all my RabbitMQ hosting needs, for production web apps.
it's a fully managed RabbitMQ hosting service. you don't have to worry about much, and you can get as large / scalable as you need. From very small and cheap, to enterprise level hosting with clustering, etc.

What are your experiences with Node.js XMPP client libraries? What do you recommend?
I would highly recommed node-xmpp, which is the most idiomatic library available for Node, in that each connection is an EventEmitter which emits events in a similar manner to the built in modules.
If you are coming at Node from a browser-based background, the way stanzas are constructed is identical to Strophe.js, which minimizes the learning curve.
As you venture further into XMPP territory, node-xmpp is also a great way to write components. And its architecture is clean enough that there is even an xmpp-server project being built on it.
Finally, I'm also developing Junction, which is a suite of XMPP middleware, similar in style to what Connect/Express offers for HTTP. I'm currently building out examples and additional documentation, but the source code has full API docs, and I think its a solid framework, particularly if you are incorporating various XEPs into your client/component.
If you are trying to build a bot for Google Talk, I would suggest using https://github.com/simple-xmpp/node-simple-xmpp
Node-xmpp did not work for me while connecting with google's servers.
