Can you like with the Test Simulator have an embedded Google Action or use a Live chat style bot on a website with Google Actions responses? Are there any code labs or third party platforms that do this?
Dialogflow has a Web Agent you can embed. Head over at Integrations and enable Web Demo. Once you do you'll get an IFrame where you can embed your code in a HTML page

I'm facing card testing attack lately on a website that uses stripe checkout.
After two days of being under attack, I finally deactivate the concerned page which leaves my website without any way to pay for services.
Now I would like to add a recaptcha to protect the stripe button, but just can't seem to understand how to do it.
I have a page with three services, under each one is a stripe checkout button. What I would like to do is to prevent bots to access the Stripe checkout page, which is external and hosted on stripe servers.
I did recaptcha integrations before in php and with a regular form. Here I'm working with nodejs and there's no real form to query. Is it possible to prevent bots from accessing those buttons ?
I saw some tutorials online but everytime the form is hosted on local server.
If you have a clue, it would be a great help.

It's easiest to implement it in the payment flow before your customers ever get to the page with the Checkout button (e.g. on the shopping cart page), but you can also bind it to the form action that triggers the creation of the Checkout Session.
In DialogFlow exists an option to integrate automatically to Messenger from Facebook. How can I do the same integration using Action Builder on Actions Console? Is it possible or a hybrid version is a better option to implement?

No, there is no integration in actionbuilder to integrate with any platforms other than Google Assistant. Action builder is intended to improve development for actions for Google Assistant by bringing the conversation design part of development into the Actions Console.
If you want to develop for Messenger you are better off sticking with Dialogflow.
I am trying to develop an agent using DialogFlow. When doing this, it is possible to debug the agent via the link https://console.dialogflow.com/api-client/#/assistant_preview .This (sort of) works as far as it allows me to interact with my agent etc. On the DialogFlow integrations page I can create a "Web Demo". Typing in exactly the same interactions with the web demo when trying to perform user sign in fails, where as on the simulator it works.

Surely both methods of interaction should work the same way otherwise this is impossible to test with any level of confidence.
User sign-in is an Assistant feature that Dialogflow supports, but it is not a Dialogflow feature.
The Web Demo is just that - a demo. You can use the Dialogflow Detect Intent API and provide your own authentication system through that if that's what you're trying to do.
If you're looking to test just the Dialogflow interaction, you can test that using the simulator on the right hand side of the page.
So I would like to implement Dialogflow fulfilliment using a custom node.js webhook. I've created a node.js app in Azure (I have my own .azurewebsites.net site), however I'm not quite sure how to link it to Dialogflow. How do I do this? Thank you.
On the dialog flow side Go to dashboard and click on fulfillment on side bar provide the web hook and basic authentication and headers.
On nodeJs make sure you provide POST Webhook API where dialogflow app sends requests.
