I have just created a new (test) symfony project and set my apache webroot to /home/user/project/ (not sure if it should be /home/user/project/web/?)
However, from what I understand based on the lightbulb section here: http://symfony.com/doc/current/book/page_creation.html#the-web-directory - there isn't any internal rerouting occurring. Therefore, this does not work:
http://localhost/random/10
but these do work:
http://localhost/app_dev.php/random/10
http://localhost/app.php/random/10
To double check, if I start the internal PHP server (php app/console server:start) then everything gets rerouted correctly - this does work:
http://localhost:8000/random/10
Am I right in thinking that I need to make changes to .htaccess? If so, is there a 'standard' section of code for using apache with symfony?

I have updated my apache2.conf (which for others would be httpd.conf if not on ubuntu as I understand it) as below:

AllowOverride All

If I remember correctly, .htaccess alredy defines DirectoryIndex as app.php. However, your Apache config file httpd.conf might be blocking the override.
Make sure that you have that line in your .htaccess and also check the value of AllowOverride (docs) within your httpd.conf. Try setting AllowOverride to All and see if that works.

I've just installed ubuntu-server_6.04.2_LTS, after the fresh installation I've enabled mod_rewrite, it's showing in phpinfo()

but, still requests are not going through index.php
You should check if for that specific directory (root folder of your project), apache is configured to allow overriding through .htaccess.
If you want to allow such override, the directives found in apache.conf or the specific settings for your virtual host should look like this:

Require all granted

I have difficulties making my .htacces work on my Ubuntu 14.04 LTS. I know it is a hidden file and all; I've searched everywhere and people seem to have the same problem. I've made a virtual host on my machine and all. Can someone please help me ?

You need to make sure the following things are true:
You need to check what DocumentRoot is set to. When an url beginning with a slash is detected, it will try to load that file relative to the document root. (docs) The file <documentroot>/pages/error.php must thus exist.
You need to make sure that .htaccess files are allowed by the main Apache configuration. The easiest way to test this is by entering garbage into your .htaccess file, saving it and reloading a page. You'll get an internal server error if Apache reads the .htaccess file. Otherwise the page loads as expected. To enable .htaccess files, the AllowOverride directive must allow something (see next bullet point). Additionally, check in httpd.conf if AccessFileName is set to something different than .htaccess. Change it as necessary, then RESTART APACHE. (docs)
For ErrorDocument, AllowOverride must be at least set to FileInfo. See the docs. Go to your main config file (httpd.conf), probably apache/Apachex.y.z/conf/httpd.conf. Search for the <Directory ...> block that corresponds to your http root, and look around if it contains an AllowOverride directive. Add FileInfo as one of the arguments, save the file and RESTART APACHE.
I have Ubuntu 12.10 with apache2 installed, and my .htaccess file is not working. I have it set up to be able to not have .php file extensions in the links, so it looks like www.website.com/login instead of /login.php, but it says that the URL "/login" is not found on the server. I have read this page and it says something about "AllowOverride All" but I don't know where that is, or if I need to add it, where I would add it.
EDIT: I have found this link and have found what it says, but it says that I have an Internal Server Error on any page I go to. I have changed the to

Order allow,deny
allow from all

but it says Internal Server Error

Make sure you have enabled mod_rewrite in your .htaccess.
Also make sure you these lines at the top of your .htaccess:
Options +FollowSymLinks -MultiViews
# Turn mod_rewrite on
RewriteEngine On
RewriteBase /
i.e. turn the MultiViews options off.

You should have or specify Directory-block in your apache configurations. You can find AllowOverride documentation here: http://httpd.apache.org/docs/2.2/mod/core.html#allowoverride

In short: specify where you would like to allow the settings to be overridden with <Directory /path/to/your/directory> and then use AllowOverride all in that directory block.
I'm running the latest Apache Server on Linux Mint 14 and trying to take my first babysteps with vhosts, where I encountered a general problem with my setup:
every option I declare in the <Directory> section doesn't seem to have any effect on any subdirectories - but as far as I know and according to the documentation it should.
For example: I'm trying to give permissions for .htaccess file by
<Directory /var/www/>
AllowOverride All
</Directory>
a .htaccess in /var/www would work properly, but e.g. a .htaccess in /var/www/test with contents "Deny from all" would take no effect.
Are there any options I have to set that I don't know of? This isn't my first apache setup so I'm kind of confused right now, but I can't find a solution.

Got it, apache2.conf includes external vhost settings, so the default settings in sites-available/default kept overwriting mine.
This is the opposite problem from most about which I have read. I am running Ubuntu 8.04 on an Amazon instance with Apache 2.2.8 and I can't figure out why setting AllowOverride to None for root doesn't stop my .htaccess file from being included.
I have a sub-directory with hello.py in it and an .htaccess file. When I browse to the file, it works fine with modpython serving the file. If I put some garbage in .htaccess I get a server error, so I know the .htaccess file is being used. Also if I delete the .htaccess file, hello.py is no longer server by modpython - instead the browser tries to open it.
In one of my sites-available (linked in sites-enabled), I have "AllowOverride None" for the root directory. I thought that this would prevent .htaccess from being included from root and all its sub-directories which should cause hello.py to not be served by mod_python. However, it continues to be served fine and I can test that .htaccess is still being included because when I modify it, I see the results in my browser.
Maybe there is something I am not understanding about my file in sites-enabled. This is the file I am using:

<VirtualHost *:8080>
<Directory />
AllowOverride None
</Directory>
</VirtualHost>

The reason the file is not served via mod_python when you delete .htaccess is because the setup for mod_python is located in it. If you move that stuff to your sites-available file, you can delete .htaccess, turn a blind eye to the problem, and call it a day.
If that doesn't satisfy you, then as to why .htacess is being read at all, I can't say. You are correct that AllowOverride None should prevent the file from ever being read. Have you considered the possibility that you screwed something up when adding the virtual site? Try throwing some garbage into the config and see if it complains, just to be sure it's being read at all.
AllowOverride is only allowed in <Directory>-sections, so you've done everything right.
One problem you could have is that other (sub-)<Directory>-sections set AllowOverride to something different than None. That will override the setting for these subdirectories.

and in /var/www (my docroot) I can use .htaccesses.
The reason why mod_python does not work anymore if you delete your .htaccess is that mod_python setup is usually in .htaccess files.

PS: In fact the docuementation linked above says that you should never set AllowOverride to something not None in <Directory />.
